Short Biography

Annelot Nijkoops is currently working in the Ph.D. program at the Sensing Technologies Lab of Free University of Bozen-Bolzano.

She obtained her Bachelor’s degree in Food Technology (2013-2017) from Van Hall Larenstein, The Netherlands during which she also performed the Minor Food, Intestinal Homeostasis and Disease at Wageningen University. She obtained her Master’s degree in Food Technology (2017-2019) from Wageningen University, The Netherlands during which she specialized mainly in Food digestion and Health. Her Master thesis topic was on thylakoids as inhibitors of lipolysis.During her Master she performed a six month Internship at Fondazione Edmund Mach, Italy where she analysed how gut microbiota responded to different diets in a pilot human dietary intervention.
